The microclimate by Lake Geneva, which protects from frost and offers excellent alluvial soils, allows for <a rel=\"noreferrer noopener\" href=\"https:\/\/kiwisuisse.ch\/\" data-type=\"URL\" data-id=\"https:\/\/kiwisuisse.ch\/\" target=\"_blank\">Domaine de la P\u00eacherie<\/a> to grow this fruit locally for nearly forty years, including thirty years organically without any treatment. <strong>Originally from China<\/strong>the kiwi thrives in our temperate climate, even in harsh winter conditions. It is an excellent source of vitamin C.<\/p>\n\n\n\n<p>The farm now covers around twenty hectares, supplying 80 to 90% of Swiss production, which amounts to <strong>300 to 400 tons per year.<\/strong>. Other farms under ten hectares exist in the cantons of Ticino, Zurich, and Aargau. However, this plant now grows in more than 125 countries, including Switzerland! The relocalization of this crop has been particularly encouraged since 2014 by <a rel=\"noreferrer noopener\" href=\"https:\/\/www.ipsuisse.ch\/fr\/quinoa\/\" data-type=\"URL\" data-id=\"https:\/\/www.ipsuisse.ch\/fr\/quinoa\/\" target=\"_blank\">IP-Suisse<\/a> in integrated production, and then by <a href=\"https:\/\/biofarm.ch\/fr\/quinoa-ch-11412-g\">Bio-farm<\/a> in organic farming.<\/p>\n\n\n\n<p>Rustic, this pseudo-cereal has the advantage of adapting to <strong>poor soils.<\/strong>However, domestic quinoa production remains low compared to other crops present in Switzerland, such as wheat, and compared to the main quinoa-producing countries globally, which are Peru, Bolivia, and Ecuador. <\/p>\n\n\n\n<p>From a nutritional perspective, quinoa is <strong>gluten-free<\/strong>With a high protein content, it contains all nine essential <strong>amino acids<\/strong> and numerous <strong>fatty acids<\/strong> (Omega 3, Omega 6, Omega 9). While it is grown in dry conditions in Ticino, the<a href=\"https:\/\/www.nassreis.ch\/fran%C3%A7ais\/%C3%A0-propos-de-nous\/\" data-type=\"URL\" data-id=\"https:\/\/www.nassreis.ch\/fran%C3%A7ais\/%C3%A0-propos-de-nous\/\">GI Wet Rice Association<\/a> supports research, cultivation, and the exchange of experiences around this <strong>cereal originally from Asia.<\/strong>.<\/p>\n\n\n\n<p>The Guillod family is one of the pioneers in this field with <a rel=\"noreferrer noopener\" href=\"https:\/\/www.rizduvully.ch\/\" data-type=\"URL\" data-id=\"https:\/\/www.rizduvully.ch\/\" target=\"_blank\">Rice from Vully<\/a>. At present, the only variety that can guarantee a satisfactory harvest in Switzerland is the <strong>Loto variety<\/strong>, a semi-complete risotto rice that is also suitable for preparing pilaf rice. These fruits originally come from <strong>subtropical countries and the Mediterranean region<\/strong>, with a winter seasonality.<\/p>\n\n\n\n<p>The Citrus Farm aims for self-sufficiency in the biodynamic movement (own weed killers, compost, fertilizers, biological pest control, etc.). The entire site is nearly <strong>energy-independent<\/strong> (solar panels, thermal panels, heat pumps for water and electricity) <strong>and in terms of water<\/strong> (rainwater harvesting). More generally, the farm advocates for zero waste, the repurposing of unsold products, and zero plastic.<\/p>\n\n\n\n<p>Swiss citrus fruits, a rarity, are particularly appreciated by top chefs and the HORECA sector, but also by private customers. For year-round availability, they are available in <strong>grocery products and spirits<\/strong>, sold on the e-shop and at Manor. Today, it has 350 animals, making it the largest herd in the country. <a rel=\"noreferrer noopener\" href=\"https:\/\/fromagerieandresa.jimdo.com\/nos-produits\/mozzarella-bufflonne\/\" target=\"_blank\">Fromagerie Andr\u00e9<\/a> in Romanel-sur-Morges processes the buffalo milk from the <a rel=\"noreferrer noopener\" href=\"https:\/\/www.mozzarelladumoulin.com\/\" target=\"_blank\">Ferme du Moulin d&rsquo;Amour<\/a> in Gollion, while <a rel=\"noreferrer noopener\" href=\"https:\/\/mozzafiato.ch\/qui-sommes-nous\/\" target=\"_blank\">Mozza&rsquo;fiato<\/a> in Cuarnens sources organic milk from <a rel=\"noreferrer noopener\" href=\"https:\/\/www.brunnenhof-sins.ch\/\" data-type=\"URL\" data-id=\"https:\/\/www.brunnenhof-sins.ch\/\" target=\"_blank\">Brunnenhof<\/a>, a farm located in Sins, with the aim of certifying its mozzarella di bufala as organic.<\/p>\n\n\n\n<p>The buffalo was domesticated <strong>in Asia<\/strong> and appears to have reached Italy with the Arabs as early as the 10th century via Sicily. Since 1996, Mozzarella di Bufala Campana has been granted a Protected Designation of Origin (PDO) with a specific set of guidelines. The Swiss mozzarella di bufala offers a <strong>less briny taste <\/strong>compared to its coastal cousin, as the Swiss buffaloes are fed herbs and hay. <\/p>\n\n\n\n<p>Buffalo milk is twice <strong>as fatty<\/strong> as cow's milk (8% fat content) and contains <strong>less lactose.<\/strong>People who are lactose intolerant or allergic to cow's milk usually tolerate it better.
